Sorry for the delay in answering this -- and I am not sure I can even
help.
Somewhere in the beginning of your jadetex.ltx there is something like:
\RequirePackage[german,english]{babel}[1997/01/23]
Try changing that to include greek and then regenerate your jadetex
formats. That might help. Or then again, it might not...
