RE: [docbook-apps] Interlude Chapters?

Assuming you don't also have real appendixes, I believe <appendix> would
work for that. You'd have to customize the xsls so the generated text
for appendix is Interlude (in the same way you'll change "Part" to
"Section") and to get the desired numeration style.
