In the transformation output, are you seeing warnings like the following:
WARNING: current implementation of tables requires a table-column for each
column, indicating column-width
If so, the message is indicating the cause of the bad output. For proper
rendering, you need to supply a colwidth attribute and value for each colspec
element.
