A very silly question

greetings cross-compiling gurus,

What would be considered stable but up-to-date releases to use in a
toolchain for a desktop/home PC rig in i386, i486, and i686?

I know it's most likely a dumb question, but after the whole
canadian-cross thing, I don't feel so silly asking.
